This morning I uncovered my container of apple cider to give it a good stir and this is what I found.

Since yesterday, the cider has decided to get busy and do something interesting. It smells rather like hard cider, but I refrained from sticking my finger in the container to taste test. Instead I stuck a spoon inside and gave everything a vigorous stir to mix lots of air into the cider.

And then...this happened.

It looks like my apple cider has developed a bit of a head. Looks pretty clean and healthy so far. Chemistry is happening right on schedule.
