About that banana bread...

That banana bread that I made this afternoon turned out surprisingly well considering. It was somewhat dense and a bit drier than normal. I attributed that to the much smaller loaves. No one seemed to notice and it disappeared in a hurry. I suppose if you slather enough butter on something, it covers a multitude of sins.

I got to thinking about it tonight and suddenly realized why the bread turned out drier than usual.

I forgot to add the 1 1/4 cups of milk. Dunno how I managed to forget that, but it definitely accounts for drier than usual banana bread. At least it wasn’t an embarrassing mistake. As long as I don’t tell anyone who ate it.

It’s always something.  One year I completely forgot the peas to go with turkey dinner (last minute microwaving solved that).  Last night it was a last-minute rush to open the (fortunately chilled) jellied cranberry sauce (I know, but my sister doesn’t like the whole berry kind).

Then there was the year the microwave broke amid preparation of either Thanksgiving or Christmas dinner.

Happy belated thanksgiving. I hope you had a wonderful day.  I am just catching up on my reads!  I cooked and prepped for 18 so it took several days and I am finally back to semi-normal.

Happy Belated Thanksgiving to you and all your devoted followers!!  Was in NYC as you knew and did not get back til last night.  At work now, but dreadfully slow, so like Annie, am catching up.

Chuckled when I read your banana bread story.  Last Christmas made my usual desserts including pumpkin pie.  I make 12” pies cause they are always quick to go.  So, pumpkin one comes out of the oven and it was gorgeous, my crust was picture perfect, as was the pie (it is not always so.........).  I always have a little of the pumpkin left over cause I double the recipe and cook that in a separate casserole dish.... SO, custard is cooled somewhat, I dig in with a spoon and instantly gag........I forgot ALL the sugar.......So picture perfect pie into garbage.  I was so annoyed at myself.  Did not make another cause it was 4PM on Christmas eve and had lots left to do.

Went to the Macy’s Day Parade--went to see the Rockettes Christmas Show, wandered everywhere we could in NYC, met the new lady in my son’s life, had DUCK for Thanksgiving--mmmm, delish as RR would say--beats turkey any day.
Had a blast--4 days of staying up late, walking all over NYC, eating too much, laughing a lot, and so on and so on… I never thought I would like it there, but I really did.

Your custard experience isn’t one I’ve had yet, but there’s still plenty of time. smile

After I realized my banana bread error, I was worried about what I might have done to my apple pie. I left it at my hostesses house after the meal and everyone was too full to eat any until after I’d left. I was relieved to hear that it was just fine. They saved me a slice and it was yummy. Sort of restored some of my faith in my kitchen abilities. ;)

Annie, congratulations on surviving. I don’t know if I’d remember how to cook for that many people anymore. Holy cow, that’s a lot of people. But I’m reminded of my childhood Thanksgivings—somewhere around 64 people packed in one big old farmhouse. (I obviously had a huge extended family.) And everyone sat down to eat all at the same time and the food was all hot at the same time. Kind of a miracle, I think.
