Yep, it’s supposed to be this way. The little yeast thingies are eating the sugar and making alcohol and giving off carbon dioxide. I suppose that’s more biological than chemical, but anyway. Then something else takes over and eats or destroys the alcohol, leaving pure vinegar. The second stage isn’t nearly as perty as the first stage. ;)
